The 3,800-student Oak Park Unified School District in Ventura County, in collaboration with Paulette Lambert, a registered dietitian and director of nutrition at the California Health & Longevity Institute at the Westlake Four Seasons hotel, is giving nutritious, healthy makeovers to the school lunch offerings at three elementary schools and the high school, scrapping most heat-and-serve and frozen convenience food items in favor of better looking and tasting scratch items using fresh ingredients.
